Organic chestnut flour is suitable for preparing bread, pancakes, crepes, smoothies, shakes, cakes or pastries. For thickening sauces and soups.
A typical Italian dish is castagnaccio: mix 500g chestnut flour with 800ml water. Mix 70g of soaked and drained raisins or other dried berries and 50g of pine nuts into the chestnut mixture. Pour the mixture into a tin coated with olive oil and sprinkle with 20 g of pine nuts. Leave to dry rather than bake in a preheated oven at approx. 150 degrees.
Sprinkle with rosemary to taste.
